More baking craziness!

Today Eoin and I 'baked' chocolate rice crispy treats. Eoin loved mixing the chocolate, marshmallows and rice crispies together but by the far the best bit was putting sprinkles on top. Well it was more like all over Mommy's kitchen rather than on the treats! Still it was lots of fun.

Haven - Haiti Aid

I just wanted to take a moment to acknowledge the amazing work being done by a wonderful Irish Charity in Haiti - Haven. Founded in late 2008, Haven has been building homes and communities in Haiti and they are training, up-skilling and employing local Haitian people to build the homes all year round. My brother JP is currently out there with the Haven team working hard on to improve the sanitary living conditions for 18,000 Haitians through the construction of hygienic trench like latrines in 16 of the makeshift camps that have sprung up across the capital.

How much?


First ever milkshake


Yesterday as a Valentine's Day treat we took Eoin to the local diner and he had his first ever milkshake. The kid thought he was in heaven! Eoin did not put that shake down for a long long time and eventually just decided to ditch the straw and slurp it down. Luckily it was a wonderful sunny afternoon so we were able to take him to the park afterward to run off the sugar high.

The joys of open adoption

Tonight as I rocked Eoin to sleep he looked at me and asked if he could show his blue dobby (blankie) to Amy his birthmother. I love that Eoin knows who Amy is and that she is part of his life. We talked about how much Amy loves Eoin and that she is very proud of him. Eoin looked up at me and just said 'yeap' but it was said so emphatically and with such gusto I know he knew that what I was telling him was true. Everyday we are in awe of the blessing that Eoin has been and open adoption has been to us as a family. I love being able to talk to people about how we are the lucky ones (not Eoin as most people insist on telling us) that we have been trusted and blessed with such and amazing gift. I love being able to talk about how we are not threatened at all by having Eoin's birthmother in our lives but rather we feel blessed in having a relationship with her.

One step closer....


to a big boy bed :-) I love that Sappho has managed to curl up on Eoin's bed the very first time he slept in it. Eoin seemed far more eager and ready to stay in bed by turning his crib into a toddler bed rather than giving him a totally new bed.

Keep an eye open....

While at the zoo we told Eoin to 'Keep an eye open for the train' and this is the face that he pulled the whole time trying to see the train. LOL!

A day at the zoo

This morning we ventured up to San Francisco and the zoo. Andy is traveling this week and so we wanted to get some special family time in before he is gone for the week. The weather was sunny and warm and so all the animals were out. We decided to become members of the zoo as we're sure we ill be back many more times! We arrived just as it opened and it felt like we had the place to ourselves. We let Eoin decide what to see and what route to take which was fun but a little chaotic. His favorite seemed to be the flamingos (he was very worried about where the other leg had gone) and the monkeys. But a fun morning became even more fun when the little steam train started to run. Eoin would have spent all day sitting on the train waving to everyone. We had a few tears when we had to leave the train but we eventually made it back to the car and Eoin was alseep before we had even exited the parking lot!

Yesterday we made cookies and Eoin decided they needed to be decorated with M&M's. Man those cookies ended up being very sweet but he enjoyed them. Unfortunaly it was reaining in the afternoon (hence the cookie making) which meant he couldn't run the sugar off outside.
